Nicole Eckman, RDN in Fort Collins, Colorado + Family

My family and I returned to Colorado in 2010 after ten years on the East coast, where I began to build my private practice. We love Colorado living!

Although formally trained in clinical nutrition, I have always had an affinity for and an active interest in integrative nutrition and functional medicine. My integrative nutrition approach is patient-centered, and although there may be a series of nutrition protocols for a particular disease or condition, I do not use a one-size-fits-all approach. I focus on the whole person, including lifestyle modifications and individual nutritional needs. I have seen firsthand how a patient’s emotional or physiological response can determine the success or failure of their treatment. I discuss with my patients the importance of using nutrition to PREVENT poor health and chronic illness later in life. I encourage clients to eat CLEAN, whole foods and avoid processed packaged foods that are so tempting to the high-stress and busy lifestyle that so many Americans are accustomed to. I believe that optimal health is not just the absence of disease, but the presence of vitality, a sense of peace, and total patient wellness—something that we ALL deserve to experience.

My Philosophy

I am so blessed to love what I do, and I think it shows in my interactions with patients. When working with me, you will receive a unique integrative approach, which stresses the importance of the relationship between practitioner and patient, focusing on the whole person and scientific evidence to support therapeutic approaches to healing the body and correcting imbalances.

Specializing in digestive disorders, endocrine imbalances, and autoimmune disease, I also work with a variety of other conditions, such as detoxification, blood sugar dysregulation, behavioral conditions, disordered eating, and weight management.

My core philosophy is to meet patients where they are and focus on small attainable goals that, when achieved, will make a positive impact on the mind, body, and spirit and encourage the patient to move forward toward their ultimate goal of optimal health.

During a session, I offer support and resources for whole foods meal planning and menu ideas, schedules and timing of meals/snacks, elimination and reintroduction diets for food sensitivities and intolerances, grocery shopping tours, vitamin, mineral and herbal supplementation, therapeutic use of functional foods, stress reduction, improving sleep patterns, reducing stress, and reducing their exposure to environmental toxins (household cleaning products, self-care products, drinking water, etc.).

I stress the importance of using clean, whole food nutrition to prevent disease and chronic illness.
By integrating these diet, lifestyle, and environmental changes our goal is to achieve Optimal Balanced Health, which many patients have been living without for so long.

I graduated with a B.S. in nutrition and dietetics from the University of Northern Colorado and obtained an M.S. in Biological Sciences with a research emphasis in immunology. During graduate school, I conducted pre-clinical research assessing the efficacy of integrative therapies paired with physical activity in breast cancer patients. Janae Mudge, Nutritionist at Enlightenment Nutrition in Fort Collins, Colorado

My academic background allows me to approach individual health needs from an evidence-based lens. However, my own experiences with personal health struggles also allow me to approach patients with understanding and empathy.

My philosophy for wellness approaches all aspects of health from a whole-body perspective. Every person has a story to tell, and their physical symptoms are part of that story. I believe in the importance of including mind, body, and spirit in each appointment and individual treatment plan. I focus on getting to the root of your health needs, and empowering you to incorporate sustainable lifestyle changes.

In my free time, I enjoy activities like yoga, hiking, reading, and a good cup of tea.
