A no-bake snack for blood sugar stability
The main purpose of these “cookies” is to act as a quick blood sugar stabilizing snack and a “sweet” treat for those who have cut out so many foods. The healthy fats are energizing, long-lasting, and portable.
Adjust the ingredient amounts to your taste.
- 1½ – 2 cups unsweetened coconut flakes
- 2 tbsp raw cocoa powder
- 8 tbsp (1/2c) coconut ghee OR
- 4 TBSP butter 4 TBSP coconut oil OR
- 8 TBSP butter
- 1/2 tsp vanilla
Pulse in blender or food processor. Make into TBSP size “cookies” and store in fridge or freezer.
Optional:
- Add 1 TBSP almond butter
- Substitute carob or vanilla powder 1:1 for cocoa powder
