A no-bake snack for blood sugar stability

The main purpose of these “cookies” is to act as a quick blood sugar stabilizing snack and a “sweet” treat for those who have cut out so many foods. The healthy fats are energizing, long-lasting, and portable.

Adjust the ingredient amounts to your taste.

  • 1½ – 2 cups unsweetened coconut flakes
  • 2 tbsp raw cocoa powder
  • 8 tbsp (1/2c) coconut ghee OR
  • 4 TBSP butter 4 TBSP coconut oil OR
  • 8 TBSP butter
  • 1/2 tsp vanilla

Pulse in blender or food processor. Make into TBSP size “cookies” and store in fridge or freezer.


  • Add 1 TBSP almond butter
  • Substitute carob or vanilla powder 1:1 for cocoa powder
