• 2 scoops whey protein
  • 2 Tbsp flax meal
  • 6 Tbsp Coconut flour
  • ¼ tsp baking powder
  • ½ tsp salt
  • 
½ tsp stevia (optional)
  • 4 eggs or egg replacer (see recipe)
  • 1 cup coconut milk
  • 4 Tbsp butter
  • ½ tsp vanilla
  • 1 cup blueberries
  • cinnamon (to taste)
  • Coconut oil for greasing

Mix together ingredients except coconut oil. Preheat pan over medium heat. Melt small amount of coconut oil to lightly grease pan. Use small ladle and drop pancake mix on pan. Drop blueberries throughout. Once side is lightly brown, flip and brown other side.

Makes 6-8 pancakes
